Early harvest

Honeys which is harvested in spring, up to June 15th, is called early honey. Early honey is therefore the first honey harvest of the bee season. They are also characterized by a high proportion of flowering plants. Due to the high glucose content (approx. 35%) causes the honey to condense and change from a liquid state to a solid state.
